How to Make Japanese-Style Fried Chicken (Karaage)

Japanese karaage, known for its crispy golden crust and juicy, flavorful interior, is a beloved comfort food. Here’s a simple guide to mastering this dish at home.

Start by cutting boneless, skinless chicken thighs into bite-sized pieces. Marinate the chicken in a mixture of soy sauce, grated ginger, garlic, and a splash of sake or mirin for at least 30 minutes (or overnight for deeper flavor). For extra tenderness, add a tablespoon of milk or yogurt to the marinade.

Next, dust each piece lightly with all-purpose flour or cornstarch, shaking off excess. This creates a light, crunchy coating. Heat vegetable oil in a deep pan to 170–180°C (340–360°F).
