Crystal purple sweet potato rolls are a delightful treat, combining vibrant color, natural sweetness, and a soft, fluffy texture. Here’s a simple guide to making them at home.

Ingredients:

- 200g steamed purple sweet potato, mashed

- 300g all-purpose flour

- 30g sugar

- 3g yeast

- 1 egg

- 120ml warm milk

- 30g butter, softened

- A pinch of salt

Steps:

1. Prepare the dough: Dissolve yeast in warm milk and let sit for 5 minutes until frothy. In a bowl, mix flour, sugar, salt, and the egg. Pour in the yeast mixture and knead into a smooth dough. Add softened butter and continue kneading until the dough is elastic and no longer sticky.

2. First rise: Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for 1–1.5 hours, or until doubled in size.

3. Shape the rolls: Punch down the dough and divide it into 8 equal portions. Roll each portion into a ball, then flatten it into a disc. Place a spoonful of mashed purple sweet potato in the center, wrap the dough around it, and seal the edges tightly. Place the rolls on a baking tray lined with parchment paper.

4. Second rise: Cover the rolls and let them rise for another 30 minutes.

5. Bake: Preheat the oven to 180°C (350°F). Brush the rolls with a little milk or egg wash for a glossy finish. Bake for 20–25 minutes until golden brown. Let them cool slightly before serving.
