How to Make Zhuangyuan Ji Zhou (Scholar's Porridge)

Zhuangyuan Ji Zhou, a traditional Cantonese porridge, is named after the "Zhuangyuan"—the top scholar in ancient imperial exams. Symbolizing success and prosperity, its sweet, creamy texture and rich ingredients make it a beloved breakfast or dessert. Here’s a simple guide to crafting this nourishing dish.

Ingredients:

1 cup glutinous rice, ½ cup sticky rice, 5 dried red dates (pitted), 5 wolfberries, 50g pork mince (optional, for savory version), 2 slices ginger, 1 tbsp sugar (or to taste), 4 cups water, salt (if using meat).

Steps:

1. Soak the rice: Wash glutinous and sticky rice, then soak in water for 1 hour to soften.

2. Prepare toppings: Soak red dates and wolfberries in warm water until plump. If using meat, marinate mince with a pinch of salt and soy sauce.

3. Cook the porridge: Bring water to a boil in a pot. Add drained rice and ginger, then simmer on low heat for 45 minutes, stirring occasionally to prevent sticking.

4. Enhance flavor: For a sweet version, stir in sugar and soaked fruits; for savory, add cooked pork minse and a dash of salt. Simmer for 10 more minutes until thick.

5. Serve: Ladle into bowls, garnish with extra wolfberries and dates. Enjoy hot!

Tips: For creamier texture, soak rice longer. Adjust sweetness to preference. This porridge not only delights the palate but also carries a wish for academic and personal achievement.
