How to Make Beef and Bok Choy Noodles: A Simple Guide

Beef and bok choy noodles are a comforting, nutritious meal that balances tender beef, crisp greens, and savory broth. Here’s a straightforward recipe to recreate this dish at home.

Ingredients:

200g beef slices (such as flank or sirloin), 1 bok choy (cut into halves), 2 cloves garlic (minced), 1 tbsp ginger (grated), 200g dried noodles (ramen or udon work well), 4 cups beef broth, 2 tbsp soy sauce, 1 tsp sesame oil, 1 tbsp vegetable oil, and optional chili flakes for heat.

Steps:

1. Prep the beef: Marinate beef slices with 1 tbsp soy sauce, ½ tsp sesame oil, and cornstarch for 15 minutes to tenderize.

2. Cook the noodles: Boil noodles according to package instructions until al dente. Drain and set aside.

3. Sauté aromatics: Heat vegetable oil in a wok or pot over medium heat. Sauté garlic and ginger until fragrant (about 30 seconds).

4. Cook the beef: Add marinated beef and stir-fry for 2-3 minutes until browned. Remove and set aside.

5. Simmer the broth: Pour in beef broth, remaining soy sauce, and bring to a gentle boil. Reduce heat and let it simmer for 5 minutes.

6. Combine ingredients: Return beef to the pot, add bok choy, and cook for 2-3 minutes until greens are tender-crisp.

7. Serve: Divide noodles into bowls, ladle hot broth and beef-bok choy mixture over them. Drizzle with sesame oil and sprinkle with chili flakes if desired.
