Korean-style braised beef, or *yangnyeom jangjorim*, is a savory, tender dish with a sweet-salty umami flavor, perfect as a side dish or snack. Here’s a simple recipe to recreate it at home.

Ingredients:

- 500g beef brisket or shank, cut into 3-4cm cubes

- 1 cup soy sauce

- ½ cup water

- 3-4 garlic cloves, lightly smashed

- 1 onion, sliced

- 2-3 bay leaves

- 2 tbsp sugar (or honey for richer sweetness)

- 1 tsp black peppercorns

- 1 hard-boiled egg, optional

- Sesame seeds and green onions for garnish.

Steps:

1. Prepare the beef: Rinse the beef thoroughly and drain. For a tender result, blanch it in boiling water for 2-3 minutes, then rinse under cold water to remove impurities.

2. Braise the beef: In a pot, combine the beef, soy sauce, water, garlic, onion, bay leaves, peppercorns, and sugar. Bring to a boil, then reduce heat to low, cover, and simmer for 1.5-2 hours, or until the beef is fork-tender. Stir occasionally to prevent sticking.

3. Enhance the flavor: Once the beef is tender, increase heat to medium-high and cook uncovered for 5-10 minutes to thicken the sauce. If using, add the hard-boiled egg during the last 30 minutes of cooking.
