Braised chicken with shiitake mushrooms is a comforting, umami-rich dish perfect for family meals. Here’s a simple guide to making it:

Ingredients: 1 whole chicken (cut into pieces), 200g dried shiitake mushrooms (soaked until soft), 5 ginger slices, 3 cloves garlic, 1 green onion, 2 tbsp soy sauce, 1 tbsp oyster sauce, 1 tsp sugar, 500ml water, and salt to taste.

Steps:

1. Prep: Soak shiitake mushrooms in warm water for 30 minutes, then slice. Blanch chicken pieces in boiling water for 2 minutes to remove impurities; rinse and drain.

2. Sauté: Heat oil in a pot over medium heat. Stir-fry ginger, garlic, and green onion until fragrant. Add chicken and cook until lightly browned.
