Ingredients: 500g pork ribs (cut into 3-4 cm pieces), 3 tbsp soy sauce, 2 tbsp dark soy sauce, 4 tbsp sugar, 1 tbsp Shaoxing wine, 1 inch ginger (sliced), 2 scallions (tied), 5 star anise, 1 cinnamon stick, and water to cover.

Steps:

1. Prep the Ribs: Soak ribs in cold water for 30 minutes to remove excess blood. Blanch in boiling water for 2 minutes, then rinse and drain.
