Ingredients: 1 whole chicken (about 1.5 kg), 5-6 dried shiitake mushrooms, 3-5 dried wood ear mushrooms, 2-3 star anise, 1 cinnamon stick, 3-5 slices of ginger, 4-5 cloves of garlic, 2-3 tablespoons light soy sauce, 1 tablespoon dark soy sauce, 1 tablespoon Shaoxing wine, 1 tablespoon sugar, salt to taste, and water.

Steps:
