Ingredients: 500g fresh edamame (in pods), 5 cups water, 3 tbsp salt, 1 star anise, 1 cinnamon stick, 3 Sichuan peppercorns, 2 bay leaves, 1 tbsp soy sauce (optional).

Steps:

1. Prepare the edamame: Rinse the pods thoroughly. Trim the stem ends slightly to allow the brine to seep in, but avoid removing the entire stem to keep the beans intact.
