How to Make Stir-Fried Chinese Yam and Wood Ear Mushrooms

Stir-fried Chinese yam and wood ear mushrooms is a nutritious, quick-to-prepare dish loved for its crisp-tender texture and light, savory flavor. Here’s a simple guide to making it at home.

Ingredients: 1 fresh Chinese yam (peeled and sliced into thin rounds), 50g wood ear mushrooms (soaked and torn into small pieces), 2 cloves garlic (minced), 1 green onion (chopped), 1 tbsp cooking oil, 1 tsp light soy sauce, ½ tsp salt, ½ tsp sugar, and a pinch of white pepper.

Steps:

1. Prep the ingredients: Soak wood ear mushrooms in warm water for 20 minutes until soft, then drain and tear into bite-sized pieces. Peel the Chinese yam, slice it into thin rounds (soak in water with a drop of vinegar to prevent browning), and mince garlic.

2. Stir-fry: Heat oil in a wok over medium-high heat. Add minced garlic and stir-fry until fragrant (about 10 seconds). Toss in wood ear mushrooms and stir-fry for 1 minute.

3. Cook the yam: Drain the yam slices and add them to the wok. Stir-fry for 2–3 minutes until slightly softened.

4. Season: Add light soy sauce, salt, sugar, and white pepper. Stir well to combine.

5. Finish: Add chopped green onion, stir for 30 seconds, then remove from heat.
