How to Make Crispy Salt and Pepper Mushrooms

Salt and pepper mushrooms are a beloved appetizer or side dish, celebrated for their crispy texture and savory, aromatic flavor. Here’s a simple yet delicious recipe to achieve perfection at home.

Ingredients:

- 300g fresh oyster mushrooms, cleaned and torn into bite-sized pieces

- 2 tbsp cornstarch

- 1 tsp salt (or to taste)

- 1 tsp white pepper powder

- 1 tsp five-spice powder (optional)

- 2 cloves garlic, minced

- 1 green chili, sliced (optional for heat)

- Fresh cilantro, chopped for garnish

- Oil for deep-frying

Instructions:

1. Prepare the Mushrooms: Pat the mushrooms dry with a paper towel to ensure crispiness. In a bowl, toss them with cornstarch until evenly coated.

2. Deep-Fry: Heat oil in a wok or deep pan to 180°C (350°F). Fry the mushrooms in batches for 3-4 minutes until golden and crispy. Remove and drain excess oil.

3. Stir-Fry the Seasoning: In a clean wok, heat 1 tbsp oil. Sauté minced garlic and green chili until fragrant (about 30 seconds).

4. Combine and Season: Add the crispy mushrooms to the wok. Sprinkle salt, white pepper, and five-spice powder. Toss quickly to coat evenly.

5. Garnish and Serve: Turn off the heat, garnish with fresh cilantro, and serve hot with a side of sweet chili sauce or lemon wedges.

Tips: For extra crunch, double-fry the mushrooms: first at 160°C (325°F) for 2 minutes, then at 190°C (375°F) for 1 minute. Enjoy this crispy, umami-rich dish as a snack or with steamed rice!
