Matcha Peanut Nougats: A Simple Recipe Guide

Indulge in the perfect blend of earthy matcha and nutty peanuts with these easy-to-make nougats. Here’s a step-by-step guide to create this delightful treat at home.

Ingredients:

- 200g granulated sugar

- 100g water

- 150g honey

- 100g unsalted peanuts, roasted and chopped

- 50g matcha powder (preferably culinary grade)

- 1 large egg white, at room temperature

- 50g unsalted butter, softened

- Pinch of salt

Instructions:

1. Prep the Base: Grease a 20x20cm baking tray and line with parchment paper. Spread chopped peanuts evenly in the tray.

2. Make the Syrup: In a saucepan, combine sugar, water, and honey. Heat over medium flame until it reaches 150°C (hard-crack stage) on a candy thermometer.

3. Whip Egg White: While the syrup cooks, beat egg white and salt until stiff peaks form.

4. Combine: Gradually pour the hot syrup into the egg white in a thin stream, whisking constantly. Continue beating until the mixture thickens and cools slightly.

5. Add Butter & Matcha: Beat in softened butter until smooth, then fold in matcha powder until fully incorporated.

6. Set: Pour the nougat mixture over the peanuts in the tray. Press gently with a spatula to spread evenly. Let it set at room temperature for 2–3 hours, then refrigerate for 1 hour.

7. Cut & Serve: Remove from the tray, cut into small squares, and store in an airtight container.

These nougats offer a chewy texture with a hint of bitterness from matcha, balanced by the richness of peanuts and butter. Enjoy as a snack or gift!
