Ingredients:
- 200g granulated sugar
- 100g water
- 150g honey
- 100g unsalted peanuts, roasted and chopped
- 50g matcha powder (preferably culinary grade)
- 1 large egg white, at room temperature
- 50g unsalted butter, softened
- Pinch of salt
Instructions:
1. Prep the Base: Grease a 20x20cm baking tray and line with parchment paper. Spread chopped peanuts evenly in the tray.
2. Make the Syrup: In a saucepan, combine sugar, water, and honey. Heat over medium flame until it reaches 150°C (hard-crack stage) on a candy thermometer.
