Zhong Shuijiao, or "Bell Water Dumplings," is a beloved Sichuanese snack named for its crescent shape resembling a bell. These savory dumplings feature tender pork filling and a rich, spicy sauce, offering a perfect balance of flavors. Here’s a comprehensive guide to making them at home.

Ingredients:

For the dough: 200g all-purpose flour, 100ml warm water.

For the filling: 150g ground pork, 1 tbsp light soy sauce, 1 tsp sesame oil, 1/2 tsp white pepper, 1 chopped green onion, 1 grated ginger.

For the sauce: 3 tbsp soy sauce, 2 tbsp vinegar, 1 tbsp chili oil, 1 tsp sugar, 1 crushed garlic clove, 1 tbsp chopped cilantro.

Instructions:

1. Make the dough: Mix flour and warm water into a smooth dough. Knead for 10 minutes, then let rest for 30 minutes. Roll into a thin log and cut into small wrappers.

2. Prepare the filling: Combine all filling ingredients in a bowl. Mix well until sticky.

3. Assemble the dumplings: Place 1 tsp of filling in the center of each wrapper. Fold into a half-moon shape and pinch the edges firmly.
