How to Make Preserved Toon: A Comprehensive Guide

Preserved toon (salted toon sprouts) is a beloved Chinese delicacy with a unique umami flavor and tender texture. Here’s a simple guide to making it at home.

Step 1: Select and Prepare Fresh Toon

Choose fresh, bright green toon sprouts with no yellowing. Rinse them thoroughly under cold water and drain. For best results, blanch the sprouts in boiling water for 30 seconds to 1 minute, then immediately transfer them to an ice bath to cool. This step softens the leaves and enhances preservation.

Step 2: Salt and Marinate

Spread the blanched toon sprouts on a clean cloth and pat them dry. In a bowl, gently mix the sprouts with coarse salt (use 20-30% of the toon’s weight by volume). For extra flavor, add a pinch of five-spice powder or Sichuan peppercorns.

Step 3: Pack and Store

Tightly pack the salted toon into a clean, airtight glass jar or ceramic crock. Press firmly to remove air pockets. Seal the container and store it in a cool, dark place for 3–7 days. The toon will release water and shrink as it ferments.

Step 4: Enjoy
