How to Make Perfect Croissants: A Step-by-Step Guide

Croissants, with their flaky, buttery layers, are a beloved breakfast treat. Making them from scratch may seem daunting, but with patience, the results are rewarding. Here’s a simplified guide to crafting these golden pastries.

Ingredients: You’ll need bread flour, active dry yeast, warm milk, sugar, salt, unsalted butter (for both the dough and laminating), and an egg wash (egg + milk for shine).

Step 1: Make the Dough

Mix flour, yeast, sugar, and salt. Warm milk to 110°F (43°C), then knead into the dough until smooth. Let it rise until doubled, about 1–2 hours.

Step 2: Laminate with Butter

Roll the dough into a rectangle. Place chilled butter in the center, fold the dough over it, and seal edges. Roll into a thin rectangle, fold into thirds (like a letter), and chill for 30 minutes. Repeat this rolling-folding-chilling process twice more for perfect layers.

Step 3: Shape and Proof

Roll the dough into a large rectangle, cut into triangles, and roll each from the base to the tip into a crescent. Place on a baking sheet, cover, and let rise until puffy (1–2 hours).

Step 4: Bake

Preheat oven to 375°F (190°C). Brush croissants with egg wash and bake for 15–20 minutes until deep golden. Cool slightly before enjoying.
