Introduction: Toona sinensis, known as "the green vegetable on the tree," is considered by Traditional Chinese Medicine not only to have a bitter taste and cold nature, with effects of clearing heat and detoxifying, strengthening the stomach and regulating qi, killing parasites, and securing essence, but it is also rich in vitamin C, high-quality protein, and minerals like phosphorus and iron, making it a rare treasure among vegetables.
There are many ways to eat Toona sinensis, but one point requires special attention: to reduce the nitrite content in the Toona sinensis itself, it must always be blanched in boiling water. This is because an average kilogram of Toona sinensis contains over 30 milligrams of nitrite, which drops to only 4.4 milligrams per kilogram after blanching.
Below are several nutritious and convenient ways to prepare Toona sinensis.
Toona Sinensis and Tofu Salad:
Select tender Toona sinensis buds, wash them, and blanch in boiling water for 5 minutes. Squeeze out the water and chop them finely. Turn the boxed tofu out onto a plate, add the chopped Toona sinensis, fine salt, and sesame oil, and mix well to serve.

Toona Sinensis "Goldfish":
100g Toona sinensis, 2 eggs, appropriate amount of flour. First, beat the eggs in a bowl and mix evenly. Then, wash the Toona sinensis, remove the hard stems, tear it into small branches, and place it in the bowl. Add some flour and mix to form an egg-flour batter. Heat the frying oil, then add the coated Toona sinensis and fry until golden brown. Remove and arrange on a plate, then sprinkle with salt and pepper.
Toona Sinensis Scrambled Eggs:
Chop the Toona sinensis into small pieces. Beat the eggs in a bowl. Then, add the Toona sinensis, salt, and MSG to the eggs and mix well. Heat oil in a wok until hot, add the seasoned Toona sinensis and egg mixture, and stir-fry for two to three minutes before serving.
Pickled Toona Sinensis:
Wash the Toona sinensis and let it air-dry to remove excess moisture. Add an appropriate amount of fine salt and knead and rub it so the salt seeps in. Then, place it in a clean container, seal it, and it will be ready to eat in 3 to 5 days.

Add the chopped Toona sinensis and mix well. Place a pancake pan on the heat, add oil once hot, and pour in the batter. Cook on both sides until done, then remove and serve.
