1. Choose tofu of moderate firmness; too firm results in poor texture, while too soft releases water easily, requires more heat to fry, and is prone to bursting.
2. The tofu can be cut into rectangular or triangular slices, about 0.5 cm thick. Do not over-fry; a light yellow color is sufficient.
3. Other ingredients can include shiitake mushrooms and bamboo shoot slices. If you are vegetarian, you can omit the meat. Historically, records indicate that Empress Dowager Cixi had vegetarian days every month. On those days, the imperial chefs would prepare this dish for her using mushroom broth, which was very savory. The method is to wash dried mushrooms, soak them for two hours, slice them, and braise them using the original soaking liquid with a few slices of winter bamboo shoots.
4. Do not use too much soy sauce; just enough to lightly color the dish. If the color is too dark, it will no longer be called "Yellow Braised Tofu."
