    1. Choose tofu of moderate firmness; too firm results in poor texture, while too soft releases water easily, requires more heat to fry, and is prone to bursting. 2. The tofu can be cut into rectangular or triangular slices, about 0.5 cm thick. Do not over-fry; a light yellow color is sufficient. 3. Other ingredients can include shiitake mushrooms and bamboo shoot slices. If you are vegetarian, you can omit the meat. Historically, records indicate that Empress Dowager Cixi had vegetarian days every month.
