Steps for stir-fried leek with shrimp skin and slippery egg

Cut the leeks into sections.

After washing the shrimp skin, add in the eggs and stir well (I used two eggs), add about two tablespoons of water, a little pepper and sesame oil.

Heat a hot pan, add about twice as much oil as usual, and pour into the shrimp skin and egg liquid.

Stir well until done.

After the shrimp skin and eggs are cooked, add the leeks and stir fry for a while.

Finally, add salt and a little sugar (the leeks should not be stir-fried for too long).
