Recently, I always miss the Guilin rice noodles I have been eating in Shanghai. There are many such rice noodle shops and they are all very delicious. But now that I am not in Shanghai, I can't eat it. Today, I prepared all the ingredients and cooked them as I remembered them. It really looks like that!

    First soak the dried rice noodles in hot water for about 20 minutes, and then rinse them with clean water until the water is clear and there is no white powder in the water. Then soak in cold water. Prepare the ingredients, spiced beef, sour beans (70 cents), salty peanuts (I bought so much for 2 yuan, but I can also fry it myself and sprinkle with some salt), bamboo shoots (ready-made ones in the supermarket)

    Soup base: I spent 4 yuan on the ribs. First, I washed the ribs and blanched them, removed the foam, and then changed the water to boil them again. Put two slices of ginger and two grains of pepper. Let the water boil for about 20 minutes and add some salt. This soup should be salty.

    Bring a pot of clear water to a boil, put the rice noodles that have been soaked before in and boil. After the water is boiled again, the rice noodles will be cooked for 1 - 2 minutes. Remove and put the green vegetables in the pot and cook for about half a minute. Remove and place them on top of the rice noodles. Spoon a few spoonfuls of bone soup into a rice noodle bowl, add some sour beans, peanuts, beef, bamboo shoots, and pour some chili oil! Wow! It's basically the same as what I eat in a Shanghai restaurant before. Take a sip of soup, fresh! It only cost a total of 15 yuan to buy these ingredients, enough for four people.
