Fujian fried rice
By BrookeKing
The first time I ate Fujian fried rice was at a Hong Kong-style tea restaurant in Shanghai, and I left a deep impression. The second time I ate it was at a Cantonese restaurant in China Town, Liverpool, England. The same cooking, different ingredients, and the same delicious food. But prices in the UK are too high, and a meal costs more than £ 10, which is really unaffordable. But craving always has to be solved, so today I try doing it myself. The taste was very successful, and my wife said it was delicious! PS. It's delicious without selfishness ~

Steps for Fujian fried rice
1
Dice the asparagus, carrots, mushrooms, ham, chicken, shrimp, and scallops2
Mix the chicken, fresh shrimp and scallops, add cooking wine and a little salt to marinate3
Beat the eggs evenly and set aside4
Put oil in the pan, pour the beaten eggs in while the oil is not hot, immediately pour the rice on the egg liquid (so that the stir-fried rice looks good), add a little salt, remove the pan and serve on a plate for later use5
Add oil into the pan, add chicken and other meat mixture, stir quickly until cooked, and remove for later use6
Use the oil left from the freshly fried meat, pour in the vegetable mixture, add in the oil, add in the stir-fried from the previous step, cover the lid and simmer7
Add the chicken essence and salt to the pan, stir well until it becomes a paste8
Pour the fried topping evenly on the super good rice9
