    Clever Tips: 1. When stir-frying beef, use plenty of hot oil and high heat. Cook the beef until it is 70% done; do not cook it too long to avoid toughness. 2. Add some oil when marinating the beef and let it sit for 1 to 2 hours. This allows the oil to seep into the meat.
