Steps for Cold and tender tofu

Mash garlic in ginger and make into a puree. Cut bell peppers into dices.2
Add vinegar, soy sauce, chili oil, pepper oil, chicken essence, sugar, and salt to the ingredients in the previous step to make a sauce.3
Place the tender tofu on a plate, leave the center of the plate blank, then cut the preserved eggs into small pieces and place them in the free space in the center. Use a knife to cut the tofu into small pieces.
