This dish seems to be called twice-cooked pork, but it doesn't feel so authentic. Let's call it stir-fried pork with garlic sprouts. You can't go wrong with this.

Steps for stir-fried pork with garlic sprouts

Wash the pork belly and shred the ginger.

Blanch pork belly in boiling water for 2 minutes, remove, drain and slice.

Cut garlic sprouts into sections and blanch in hot water for 2 minutes, remove and drain.

Do not put the oil in the hot pan, directly pour in the pork belly slices and a small amount of shredded ginger and stir-fry until the oil is reached.

Pour out the excess oil from stir-frying and use it to mix other vegetables cold. Add 1 spoonful of bean paste and 1 spoonful of chopped pepper and cooking wine and continue to stir fry.
