Steps for Cold lotus root

Peel and wash the lotus root, and cut it into thin slices.

Blanch the cut lotus root in boiling water for a minute or two.

Remove the blanched lotus roots and place them in cold water.

Don't throw away the water used to blanch lotus roots. You can pour it into a bowl and put some sugar to make delicious lotus root water. It will kill the fire and beautify your skin.

Take a large bowl for mixing vegetables and pour in lotus roots. Add salt, sugar, vinegar, and sesame oil in turn.
