Steps for Bean curd with chicken sauce

Cut the green onion into sections and slice the ginger into slices. Cut the tofu into rectangles according to the size you design. I split it in half, then roll it up from the beginning in pairs, and finally wrap it with cotton thread. Of course, the tighter the better.

Change the chicken you bought into a knife. I bought half a chicken, and all I needed was a chicken skeleton. Remove the chicken thighs, chicken wings, and breast meat for other purposes. Don't pick the chicken too cleanly, and eat the bones too.

Put appropriate amount of water in the pan, add the chicken skeleton and blanch it, then remove it for later use.

Put clear water in the pan, add pepper, aniseed, green onion, ginger, and soy sauce to boil.

Put the chicken skeleton in the brine, add salt, and cook over medium heat for half an hour. Remove the chicken skeleton, and set aside to control the water.

Add the tofu rolls to the brine, cook for half an hour to an hour, and remove them when the water is basically dry.

Salt should be added according to the amount of ingredients, not too much, because eventually the soup is dried, and if there is a lot of salt, it will be very salty.
