Cucumber imperial cuisine is a dish made by cutting cucumbers into slits and adding beef, mushrooms, yellow and white egg skins and other vegetables. Because of its sweet and sour taste, bright color and easy appetizing, it was once the main court banquet dish.' "Shan" means good cooking and belongs to the steaming and stewing cooking method. This dish used to be made with pumpkin or cucumber, eggplant, dates, tofu and other vegetable materials as the main ingredients, stuffed with beef, chicken or vegetables, and put them in miso soup and boiled them or steamed them in a steamer. The current cooking method is slightly different.

    Rub and wash the cucumber, cut it into 2 equal parts according to the length. Make 3 oblique cuts on the outer skin at intervals of about 0.5 cm wide, then cut it for the fourth time, and so on, cut the cucumber for later use.

The shredded mushrooms are about 0.2 cm thick, soak in water for about 1 hour, then remove the stalks, cut into shredded pieces (30g) of the same size as the beef, and stir with the seasoning sauce. Fry the eggs into yellow and white skin, cut them into thin threads of the same size as beef, and cut the shredded peppers into about 1cm long to make sweet vinegar water.

    Pour appropriate amount of cooking oil into a heated pan, add cucumber and stir-fry over high heat for about 1 minute, and let cool (150g)

    Pour appropriate amount of cooking oil into a heated pan, add beef and mushrooms, and stir-fry over medium heat for about 2 minutes each. Stuff the stir-fried beef and mushrooms into the gap between the knife marks of the cucumber, and then add the yellow and white eggs respectively. Sprinkle with shredded pepper on top of the cucumber placed in the vegetable, fill a bowl with sweet vinegar water. Sometimes, you can also serve it with sweet vinegar without dripping it with it.
