Bridge tofu
By EileenWard
[Crossing the Bridge Tofu] is a Shaoshan dish, which is modified based on the strange flavor of tofu. The reason why it is called "Crossing the Bridge" is because it consists of "small bridges" paved by tofu. The tofu of this dish is tender and refreshing, and what is more nostalgic is the egg yolk in the round plate. The fragrance fills your mouth. It can be said to combine color, taste and cultural connotation in one plate, making people unforgettable.
