Chop the sour beans, coriander, and chopped green onion, dilute the Mapo tofu sauce with half a bowl of water, and add three tablespoons of water to the cornflour to make thickening water. Heat the pan first and put a little oil into the pan. When the oil is not yet hot, put the tofu in the pan to soak the oil. When the skin turns golden, start the pan, put the tofu on a plate, and don't pour out the oil in the pan.2
Use the remaining oil to fry the minced meat until fragrant, then add the sour beans to stir-fry together. After frying for two minutes, pour the water diluted with Mapo tofu into the pan and cook. After cooking for about 1 minute, thicken with cornflour water, and wait until the sauce is thick. Add the chopped coriander and chopped green onion in it after 30 seconds.3
