Steps for Pearl glutinous rice meatballs

1
Prepare the ingredients: lean meat, glutinous rice, cooking wine, starch, a duck egg, salt, and chicken essence. Eggs were originally needed, but the eggs were not available at home, so duck eggs were used instead. Wash the glutinous rice and put it aside. Wash the lean meat and chop it into minced meat.
2
Add cooking wine, egg white, starch, salt, and chicken essence to the lean meat to taste and stir well.
3
Squeeze the minced meat into small balls.
4
Roll each of the pinched small meat balls into the plate containing glutinous rice several times. However, the meat ball may be deformed, so I piled the glutinous rice on it.
5
After loading the plate, I was afraid that some meat balls would not be stained with glutinous rice, so I sprinkled a handful of glutinous rice on the plate.
6
After steaming for 20 minutes on high fire, take out the cage and fragrant pearl glutinous rice meatballs!
7
There was still some glutinous rice left, so I stirred the egg yolk and glutinous rice well and steamed it as well. It took a while to realize that I had forgotten to add water. Fortunately, the water was added in time and it did not turn into stiff rice.
