Stuffed bitter gourd tofu
I didn't know about this dish before, but only after I married my husband did I know that they had this snack there. I can use it for supper and use it as a staple food! My husband is from Pingnan, Guangxi. They only sell it at night. It's cheap but I think it's quite delicious, so I want to share it with everyone!

Steps for Stuffed bitter gourd tofu

1
Wash the glutinous rice first and soak it. Buy pork that is leaner and less fat, then wash it, peel it, and chop it for later use. Wash the leeks and chop them into pieces. Then fish out the glutinous rice and remove excess water from the rice. Then mix the three ingredients of meat, leeks and glutinous rice and place them on a large plate. Add salt and soy sauce, and stir well.
2
Wash the balsam pear and cut it into sections. Then cut the big one with hollowed oil tofu in the middle into half. The small one will be complete.
3
Then you can brew it! Figure 1 + Figure 2 = Figure 3... Look, my brew is ready.4
It's time to steam, I forgot to take pictures at this step... Put the brewed bitter gourd and tofu into a steamer, boil the water on high heat, and then steam over medium heat for 20 minutes.
5
It's steaming over there, so we can't sit idle. We're ready to cook juice. Chop the tomatoes, and then pat the garlic into minced garlic. Remove the pan, add oil and then garlic and stir fry until fragrant, then add tomatoes and continue to fry, add a bowl of water to boil, add salt, sugar, vinegar, and soy sauce, and turn off the heat when the sauce is thicker.
6
The juice is cooked, and there is enough time for steaming here, so I am ready to eat.
7
Drizzle it with the sauce we cooked! A little sour, a little sweet, and a little bitter... This taste is indescribable.
