Mapo tofu was created by Liu, the wife of Chen Senfu (commonly known as Chen Fuchun), owner of a small restaurant at Wanfuqiao in the northern suburbs of Chengdu City in the early years of Tongzhi of the Qing Dynasty. Liu's face has pockmarks and is called Chen Mapo. The roasted tofu she created was called "Chenmapo Tofu", and her restaurant was later called "Chenmapo Tofu Shop".

Steps for Simple Mapo tofu

Dice the tofu.

Add water to the pan and bring to a boil, add 1 teaspoon of salt, put the diced tofu into boiling water and blanch for 2 minutes, pick up and drain the water.
