Wash the mutton, blanch it, and drain it. The mutton cooked in this way has no mutton smell

Heat the frying pan and add the oil. When the oil is 60% hot, add the rock sugar. Slowly melt the rock sugar over low heat and melt it into sugar oil, ready to stir-fry the sugar color

Add soy sauce, add water to cover the mutton, and then add appropriate amount of onion, ginger, cooking wine and salt. Bring to a boil.
