Peel the Thai grapefruit and peel the pulp into small grains.2
Put the cashew nuts into the oven and bake until golden brown, being careful not to burn them.3
Bake the dried shrimps on a pan with low heat until golden brown.4

Mix lime juice with coconut, chilli paste, fish sauce, coconut and sugar to make sweet chili sauce. (I don't have chili paste, but I have Thai hot sauce, so it's just right instead.) Secondly, there happened to be lemons at home, so I didn't use lime.)6
Place grapefruit granules, mashed cashew nuts, and dried shrimp on a large plate, add sweet spicy sauce, and mix well. On the plate, sprinkle with the fried shredded red shallots, and garnish with mint leaves. (I am a rookie in cooking. I don't know how to make shredded red onions, so I made it randomly. Hehe, I ate it myself anyway)7
