Steps for mapo tofu

1. Cut tofu into small pieces, add light salt water and blanch for 2 minutes, remove and drain2
; 2. Add the oil in the pan and heat it, wait until the oil is 40% hot, add the minced meat, stir-fry and serve;3
3. Stir fry the spicy sauce over medium heat to give the fragrance, add the chili noodles/fermented beans/sugar, stir-fry the red oil, add the broth, add the tofu and cook for 3 minutes, add soy sauce/water starch to thicken/minced meat/chicken essence/shallots and cook for 2 minutes, water starch to thicken the juice and sprinkle with pepper
