Steps for Return to the pot of pig's feet

1
The cleaned pig's trotters are divided into two
2
Cut it into small pieces and place it in a cold water pot
3
Boil until it boils, skim off the foam. Don't rush. Make sure you cook it for a while longer. There is really a lot of dirty blood foam.
4
Remove the scalded pig's trotters and wash them with warm water to remove impurities on the surface, drain the water, put a little oil in the pan and heat it, add the pig's trotters and stir-fry
5
Stir fry until the skin of the meat is tight and the surface turns slightly yellow, add green onions, ginger and garlic, and stir fry until fragrant
6
Pour hot water into the pan to cover the trotters, add soy sauce, cooking wine, soy sauce, and salt
7
After boiling over high heat, transfer to a casserole and add 2 hawthorns
8
After boiling again, add rock sugar, and turn to low heat to simmer; simmer until 1/4 of the soup is left, remove the pig's trotters, and set aside the soup
9
Remove from another pan, put a little oily hot saucepan and dried red pepper, add the stewed pig's trotters and stir fry for a while
10
Pour in the remaining soup in the casserole and cook it over high heat. When there is not much soup left, add the garlic white section and stir fry until it is cooked.
11
Add the green garlic and stir fry evenly and remove from the pan
