vermicelli eggplant

Eggplant with vermicelli is a traditional dish in my family and one of my favorite dishes. This is the second time I have served this dish. It was published once in my blog before, but the pictures and process were not very good. Today, I will play this fan eggplant dish again.

Steps for vermicelli eggplant

Soak the vermicelli with clear water.

Peel the eggplant and cut it into dices.

Chop the onions, ginger and garlic.

Put oil in the pan and saute star anise until fragrant.

Add diced eggplant and stir fry.

Add salt and continue to stir until it is withered and ready for use.

Put oil in the pan and saute the peppers until fragrant.

Add in the meat filling.

Add green onions and ginger and stir-fry until color changes.

Add cooking wine, soy sauce, sugar and stir well.

Pour in the stir-fried diced eggplant and stir-fry.

Put in clear water and cover the diced eggplant slightly.

After the water boils, add the soaked vermicelli.

Turn to medium heat and cook until the soup is sucked dry by the vermicelli.

Sprinkle with minced garlic and stir well.

After taking out of the pan, stir slightly with chopsticks to prevent the vermicelli from sticking.
