Roasted bran is a flour product. Roasted bran is derived from wheat and is produced by fermentation and steaming of gluten. It is a special food with high protein, high inorganic salts, low fat and low carbohydrates.
Sixi Roasted Bran is also called vegetarian assorted food. It originates from the five-spice roasted bran from Shanghai Gongdelin Vegetarian Restaurant. It is a very classic Shanghai local dish.

Steps for Sixi Roast Bran

Soak the roasted bran, wait until it is soft, squeeze and rinse it with your hands under the faucet, tear it into small pieces, cook in a boiling water pot for a few minutes, remove it, drain it for later use.

First soak mushrooms, day lily, and black fungus in cold water,(day lily must be replaced with water several times until the water is clear) Wash them, shred mushrooms, tear fungus into pieces, and cut yellow flowers short. Soak peanuts in hot water and remove clothes for later use. The bamboo shoots I use are canned. Open the can, take part of them and put them in boiling water, boil them, drain them for later use.3
Remove the oil from the oil pan, add more oil, add the drained roasted bran and fry until the surface is golden brown, strain and remove the oil.4
Leave a little residual oil in the pan, add mushrooms, day lily, black fungus, bamboo shoots, and peanuts, stir fry for a while, and add the fried roasted bran. Pour the mixed soy sauce and sugar on top, add a little salt, add the stock that will not drown the ingredients, boil over high heat, turn to low heat, cover and simmer.

Simmer until the water is almost dry (15-20 minutes), turn to high heat, add soy sauce to color, and add a spoonful of pure sesame oil to the pan.
