Steps for braised hairtail

Wash the hairtail, cut it into sections about 8 cm, add five-spice powder, and marinate with salt for 15-20 minutes. Standby.

Put more oil in the pan and heat it up, and fry the hairtail section until done.

Remove from the pan when both sides are golden yellow, drain the oil and set aside. If you have an electric baking pan at home, you can pour the oil into it and lay the fish directly on it and cover it. This not only reduces oil smoke, but also saves trouble. That's how I used it.

Remove the hairtail, put a little oil in the pan, add the chopped onions and ginger and stir-fry, add the fried hairtail, cooking wine, vinegar, soy sauce, sugar, a little water, and cover more than half of the hairtail. You can smell the strong aroma of fish after stewing for a while.
