Soak the rice for 30 minutes first.

Cut the beef meatballs in half, add a little oil in the earthen pot, and fry the beef meatballs on both sides. This step has two effects: one is to make the beef meatballs more crispy; the other is to leave a layer of oil on the noodles to avoid sticky rice.

Mix oyster sauce, soy sauce, sesame oil, and hot sauce into a sauce, and soak the fried beef meatballs into it.

Put the soaked rice into the pot and add appropriate amount of water. The ratio of rice to water is about 1: 1.5; bring to the boil over high heat, and then change to medium heat until 80% cooked (during the cooking process, you need to constantly stir the rice with chopsticks to make it evenly heated), add the flavored beef meatballs and two eggs, change to low heat, cover and simmer for three to five minutes.
