Luffa and meatball soup is a light, nutritious dish loved for its fresh flavor and comforting texture. Here’s a simple guide to making it at home.
Ingredients:
- 1 fresh luffa (peeled and cut into rounds)
- 200g ground pork (or chicken)
- 1 tbsp ginger (minced)
- 1 clove garlic (minced)
- 1 egg
- 2 tbsp starch
- Salt, pepper, and sesame oil to taste
- 4 cups water or broth
- Green onions (for garnish)
Steps:
1. Prepare the meatballs: Mix ground pork, ginger, garlic, egg, starch, salt, and pepper in a bowl. Stir until sticky, then shape into small balls (about 1.5cm in diameter).
2. Cook the meatballs: Bring water or broth to a boil in a pot. Gently drop in the meatballs, reduce heat, and simmer for 5 minutes until they float and cook through.
3. Add luffa: Add luffa rounds and cook for another 3–4 minutes until tender but still slightly crisp.
4. Season: Season with salt, pepper, and a few drops of sesame oil. Garnish with chopped green onions.
Tips: For extra flavor, add a pinch of dried shrimp or mushrooms to the broth. Serve hot with rice for a complete meal. This soup is quick, healthy, and perfect for any season!
