1 whole chicken (cut into pieces), 200g fresh or dried agaricus mushrooms, 5 ginger slices, 3 scallions (chopped), 2 tbsp cooking wine, 1 tbsp light soy sauce, 1 tsp dark soy sauce, 1 tbsp sugar, salt to taste, and water or broth.

Steps:

1. Prep the ingredients: Soak dried agaricus mushrooms in warm water for 20 minutes until soft (if using fresh, rinse and trim). Cut chicken into bite-sized pieces, blanch in boiling water with 1 tbsp cooking wine for 3 minutes, then drain.
