Hangzhou pepper stir-fried beef is a classic Chinese dish loved for its tender beef, spicy kick, and vibrant flavors. Here’s a simple guide to making it at home.
Ingredients: 300g beef sirloin (sliced thin against the grain), 8-10 Hangzhou peppers (sliced), 2 cloves garlic (minced), 1 tbsp ginger (minced), 2 tbsp soy sauce, 1 tbsp oyster sauce, 1 tsp sugar, 1 tbsp cornstarch, 2 tbsp cooking oil, and a pinch of sesame oil.
Steps:
1. Marinate the beef: In a bowl, mix beef with 1 tbsp soy sauce, 1/2 tsp sugar, cornstarch, and 1 tbsp oil. Let it sit for 15 minutes to tenderize.
2. Prep the sauce: Combine the remaining soy sauce, oyster sauce, and sugar in a small bowl.
3. Stir-fry: Heat oil in a wok over high heat. Add beef and stir-fry for 1-2 minutes until browned. Remove and set aside.
4. Sauté aromatics: In the same wok, add garlic and ginger until fragrant. Toss in Hangzhou peppers and stir-fry for 1 minute.
5. Combine: Return beef to the wok, pour in the sauce, and toss quickly for 30 seconds. Drizzle with sesame oil before serving.
Tips: Slice beef thinly for even cooking. Don’t overcook the peppers to keep them crisp. Serve hot with steamed rice for a perfect meal!
