How to Make Simple Stir-Fried Young Pumpkin

Simple stir-fried young pumpkin is a quick, healthy, and delicious dish that highlights the vegetable’s natural sweetness and tender texture. Here’s a step-by-step guide to making it perfectly.

Ingredients:

- 500g young pumpkin (peeled and sliced into thin, half-moon pieces)

- 2 cloves garlic (minced)

- 1 green onion (chopped)

- 1 tbsp cooking oil

- 1 tsp light soy sauce

- ½ tsp salt (or to taste)

- A pinch of sugar (optional, to enhance sweetness)

- ½ tsp sesame oil (for aroma)

Instructions:

1. Prep the Pumpkin: Choose a tender young pumpkin with thin skin. Peel it, remove the seeds, and slice it uniformly (about 0.5cm thick) for even cooking.

2. Heat the Pan: Heat oil in a wok or skillet over medium-high heat. Add minced garlic and stir-fry until fragrant (about 10 seconds).

3. Stir-Fry the Pumpkin: Add the pumpkin slices and stir-fry for 3–4 minutes until they soften slightly. If the pan feels dry, add a tablespoon of water to prevent burning.

4. Season: Drizzle in light soy sauce and sprinkle salt (and sugar, if using). Toss well to coat the pumpkin evenly. Continue stir-frying for 2–3 minutes until the pumpkin turns translucent and tender but not mushy.

5. Finish and Serve: Turn off the heat, add chopped green onions and a drop of sesame oil. Mix quickly and transfer to a plate. Serve hot with steamed rice.

Tips: For extra flavor, you can add a pinch of white pepper or a dash of rice vinegar. Young pumpkin cooks quickly, so avoid overcooking to keep its crisp-tender bite. This simple dish is a versatile side that complements any meal!
