How to Make Classic Strawberry Napoleon

A Strawberry Napoleon, or Mille Crêpe with strawberries, is a delicate dessert featuring layers of crisp crêpes, fresh strawberries, and light pastry cream. Here’s a simple guide to create this elegant treat at home.

Ingredients:

For crêpes: 1 cup all-purpose flour, 2 tbsp sugar, 2 eggs, 1½ cups milk, 2 tbsp melted butter, pinch of salt.

For pastry cream: 2 cups milk, 4 egg yolks, ½ cup sugar, ⅓ cup cornstarch, 1 tsp vanilla, 2 tbsp butter.

For assembly: 2 cups fresh strawberries (sliced), powdered sugar for dusting.

Steps:

1. Make crêpes: Whisk flour, sugar, and salt. Add eggs, milk, and melted butter; mix until smooth. Rest batter 30 minutes. Heat a lightly oiled pan over medium heat, pour ¼ cup batter, swirl to cover. Cook until golden (1-2 min per side); repeat. Cool completely.

2. Prepare pastry cream: Heat milk. Whisk egg yolks, sugar, and cornstarch until pale. Gradually add hot milk, then cook over medium heat, stirring constantly, until thickened (5-7 min). Remove from heat, stir in vanilla and butter. Cool with plastic wrap on surface.

3. Assemble: Layer a crêpe on a plate, spread pastry cream, add strawberries. Repeat, ending with a crêpe on top. Dust with powdered sugar. Chill 1 hour before serving.

Tips: For extra crisp, bake crêpes at 350°F (180°C) for 5 mins. Use ripe, sweet strawberries for best flavor. Enjoy this heavenly blend of textures and fruity freshness!
