Ingredients: 500g white fish (like sea bass or cod), cut into 2-inch cubes; 2 tbsp cooking oil; 3 sliced garlic; 1 tbsp ginger, julienned; 1 sliced green onion; 2 tbsp light soy sauce; 1 tbsp dark soy sauce; 1 tbsp Shaoxing wine; 1 tsp sugar; 1 cup water; 1 tsp cornstarch (for thickening); optional chili flakes for heat.
Steps:
1. Prep the fish: Rinse fish cubes and pat dry. Marinate in 1 tsp light soy sauce and 1/2 tsp Shaoxing wine for 10 minutes.
2. Sear the fish: Heat oil in a wok over medium-high heat. Add fish cubes and sear until golden on both sides (about 2 minutes per side). Remove and set aside.
