Meiling porridge

How to Make Mei Ling Congee: A Complete Guide

Mei Ling Congee, a silky, nutritious porridge, is named after Soong Mei-ling, beloved for its delicate flavor and health benefits. Here’s a simple yet detailed guide to crafting this classic Chinese dish.

Ingredients:

- ½ cup rice (preferably japonica or glutinous rice for creaminess)

- 3 cups water or chicken broth

- 100g boneless, skinless chicken breast (shredded)

- 50g fresh or canned pineapple (diced)

- 1 tbsp goji berries

- 1 tsp rock sugar (adjust to taste)

- A pinch of salt

Steps:

1. Prep the rice: Rinse rice thoroughly, then soak in water for 30 minutes to soften. Drain well.

2. Cook the base: In a pot, combine rice and water/broth. Bring to a boil, then reduce heat to low. Simmer for 40–50 minutes, stirring occasionally, until the rice breaks down into a thick, porridge-like consistency.

3. Add proteins & fruits: Stir in shredded chicken, diced pineapple, and goji berries. Simmer for 10 more minutes until the chicken is cooked through.

4. Sweeten & finish: Add rock sugar and a pinch of salt, stirring until dissolved. For extra richness, drizzle with a teaspoon of coconut milk before serving.

Tips:

- For a smoother texture, blend half the congee before returning it to the pot.

- Top with crushed peanuts or dried osmanthus for added aroma.

Enjoy this warm, sweet-savory congee as a comforting breakfast or dessert!
