How to Make Spicy Stir-Fried Lotus Root

Ingredients: 300g fresh lotus root, peeled and sliced thinly; 2-3 dried red chilies (sliced); 1 clove garlic (minced); 1 tbsp ginger (minced); 2 tbsp cooking oil; 1 tbsp light soy sauce; 1 tsp dark soy sauce (for color); 1 tsp vinegar; 1 tsp sugar; Salt to taste.

Steps:

1. Prepare the lotus root: Soak sliced lotus root in water with a splash of vinegar for 10 minutes to prevent browning. Drain and pat dry.

2. Heat the wok: Add oil over medium-high heat. Toss in dried chilies, garlic, and ginger. Stir-fry until fragrant (about 30 seconds).
