How to Make Hand-Pulled Noodles: A Step-by-Step Guide

Hand-pulled noodles, a beloved staple in Chinese cuisine, are prized for their chewy texture and ability to absorb flavors. Making them at home is simpler than it seems—just follow these steps.

First, prepare the dough. Mix 2 cups of all-purpose flour with a pinch of salt. Gradually add ¾ cup of warm water, stirring until a shaggy dough forms. Knead on a floured surface for 10 minutes until smooth and elastic. Let it rest, covered, for 30 minutes to relax the gluten.

Next, roll out the dough. Divide it into 2-3 portions. Flatten one piece with a rolling pin into a thin rectangle, about 1/8-inch thick. Dust generously with flour to prevent sticking.

For the fun part: pulling the noodles! Hold the dough sheet at both ends and gently stretch it lengthwise, then fold it back and stretch again repeatedly until it forms long, thin strands (about ¼-inch wide). If thicker noodles are preferred, simply stretch less.

Finally, cook the noodles. Bring a large pot of water to a boil, add the noodles, and cook for 2-3 minutes until they float. Drain and toss with your favorite sauce—whether it’s a simple soy-garlic mix or a rich beef broth.

With practice, you’ll master the perfect chewy texture. Enjoy the satisfaction of crafting fresh, delicious noodles from scratch!
