Roujiamo, often called the "Chinese hamburger," is a beloved street food featuring tender, flavorful meat stuffed in a crispy yet chewy bun. Here’s a simple guide to making it at home.

Step 1: Prepare the Meat

Marinate 500g of pork shoulder (or beef) in soy sauce, Shaoxing wine, five-spice powder, sugar, ginger, and garlic for at least 2 hours. Simmer the meat in water with a cinnamon stick and star anise until fork-tender (about 1.5 hours). Shred it finely, then stir-fry with a tablespoon of soy sauce and a pinch of chili powder until slightly caramelized.
