Ingredients:

2 cups cooked, cold rice (preferably day-old for firmness), 2 large eggs, 3-4 scallions (finely chopped), 3 tbsp cooking oil, 1 tsp soy sauce, ½ tsp sesame oil, salt to taste, and a pinch of white pepper (optional).

Steps:

1. Prep the scallion oil: Heat 2 tbsp oil in a wok over medium-low heat. Add chopped white parts of scallions, fry slowly until golden and fragrant (2-3 mins), then turn off heat. Stir in green parts and reserve.
